Santa Fe Chicken Enchiladas– Layered with smoked chicken, corn tortillas, Jack cheese and New Mexico chili sauce, with Tejas rice and black beans.

mmm...I dream the same dream, but in a different town, with a bad mexican restaurant, the chicken is just plain pollo, and the rice doesn't have any other name before it, except "side of."
